WHAT YOU'LL NEED
- Chemex coffee maker
- Chemex filters
- Elgon, Engoma or Gourmet Coffee beans (medium-coarse grind is recommended)
- Scale (for precise measurement)
- Kettle (for boiling water)
- Timer
- Mug
Instructions:

Rinse the Chemex and its filter with hot water. Make sure the triple sided side of the filter paper faces the spout. This will remove the paper taste from the filter and ensures the paper sticks to the wall of the Chemex and also warms up the Chemex.

Measure out your coffee beans. A good rule of thumb is to use about 20 grams of coffee for a Chemex.
- Grind your coffee beans to a medium-coarse grind.

Place the filter in the Chemex and add the ground coffee. Give the Chemex a gentle shake to level out the coffee.

Boil water in a kettle and let it sit for about 45 seconds to cool down to about 93c.

Pour the hot water over the coffee grounds in a circular motion until they are fully saturated. Wait for 30 seconds to allow the coffee to bloom (this is when the coffee expands and releases gas).

For the second pour, slowly pour the remaining hot water over the coffee, making sure to keep the water level just below the top of the Chemex.

Let the coffee brew until the timer reaches 4 minutes.

Carefully remove the filter and dispose of it.
- Pour the freshly brewed coffee into your mug and enjoy!
